Ingredients :
- 2 sweet potatoes
- ¼ cup olive oil
- 400g chickpeas
- ¼ bunch kale, finely chopped
- ½ tsp chilli flakes
- 50g feta, crumbled
- Squeeze of lemon
Method :
- Preheat the oven to 200C and line 2 baking trays with baking paper.
- Cut sweet potatoes in half. Brush sweet potatoes with 1 tbsp of olive oil. Place, cut side down and bake for 30 minutes or until tender.
- In a large bowl place chickpeas, kale, and oil. Toss to combine. Place kale mixture on the remaining baking tray and bake for 10 minutes.
- Add feta to kale mixture, then toss to combine. Top the sweet potatoes with the kale mixture. Season with chilli flakes and a squeeze of fresh lemon.
