Ingredients :
- 3kg chicken breast
Marinade :
- 1/2 cup soy sauce
- 1 tbsp sesame oil
- 2 tbsp orange juice
- ¼ cup corn-starch
- ¼ cup all-purpose flour
- 1 tsp baking powder
Orange Sauce :
- 1 tbsp sesame oil
- 2 tbsp chilli sauce
- 2 tbsp fresh ginger
- 2 garlic cloves, minced
- 2 cups chicken broth
- 1/4 cup orange juice
- 2 tbsp soy sauce
- 2 tbsp sugar
- ¼ cup corn-starch
Method :
- In a large bowl, combine all the ingredients for the marinade and whisk to combine. Slice up chicken into cubes and toss in the marinade. Let the chicken marinate for 30 minutes or up to 1 hour.
- Heat up oil in a large frying pan over medium heat. Add ginger and garlic into the frying pan and cook until fragrant. Add the rest of the orange sauce ingredients to the frying pan, except the corn starch and bring to a boil then turn off the heat.
- Mix corn-starch in a small dish and add 2 tbsp of water. Slowly pour into the orange sauce while whisking.
- Take the chicken out of the marinade and start frying the chicken. Fry for 5-6 minutes, then remove to a paper towel.
- Once the chicken is fried, add it to a large bowl with the mandarins. Garnish with sesame seeds and spring onion.
