Ingredients :
- 250g mascarpone cheese
- 250g cream cheese
- 1 cup milk
- 1 tsp lemon extract
- 2/3 cup lemon juice
- 3 tbsp sugar
- 2 tsp grated lemon zest
- 24 sponge ladyfingers
Method :
- In a large bowl, using an electric mixer beat mascarpone cheese, cream cheese, milk, and lemon extract.
- Whisk lemon juice and sugar in a medium-sized bowl until sugar is all dissolved. Dip 8 ladyfingers into the lemon juice. Place in a single layer in an 8-inch square dish. Spread the mascarpone mixture over top. Repeat layers twice.
- Sprinkle with lemon zest and refrigerate for at least 2 hours before serving.
