These Pasties are a tried and true way to get the kids to eat more veggies! Using the Blenditarian method blending 50% Mushrooms + 50% Beef mince, these pasties are a delicious way to add a nutritional kick to a classic favourite!

Ingredients :
- 250g mushrooms, finely chopped
- 250g beef mince
- 1 tbsp olive oil
- ½ onion, diced
- 1 cup mixed vegetables (fresh or frozen)
- 1 beef stock cube
- 1 tbsp tomato paste
- 1 tbsp worcestershire sauce
- 2 tbsp water
- ¼ tsp salt
- ¼ tsp white pepper
- 3 sheets frozen shortcrust pastry, thawed
- 1 egg
Method :
- Preheat oven to 180℃ and line two baking trays with baking paper.
- Place oil in a large frying pan over medium heat. Add onion and cook, stirring for 2-3 minutes or until softened.
- Add mushrooms and mince to the pan and cook, stirring for 3-4 minutes or until the mince is mostly cooked. Add the vegetables to the pan and cook, stirring for a further 2-3 minutes.
- Add the stock cube, tomato paste, worcestershire sauce and water to the pan. Stir to combine. Reduce heat to low and simmer and 5 minutes for the sauce to reduce and thicken.
- Season to taste with salt and pepper.
- Cut each sheet of pastry into quarters or use a round cutter to cut 4 rounds from each sheet.
- To make the pasties, place a heaped dessert spoon of the beef and vegetable mixture in the center of each piece of pastry then fold in half and crimp the edges together with your fingers or a fork.
- Transfer the pasties to the prepared baking trays.
- Place egg in a small bowl and lightly whisk. Use a pastry brush to glaze the top of each pastie.
- Bake for 15-20 minutes or until golden brown.
- Allow to cool for 5 minutes before serving.
