Serves : 8-10 muffins
Ingredients :
- 1 ½ Cup Plain Flour
- ¾ Cup Caster Sugar
- ¼ tsp Salt
- 2 tsp Baking Powder
- ⅓ Cup Canola Oil
- 1 Large Egg
- ½ Cup Milk
- 1 ½ tsp Vanilla Extract
- 1 Cup Blueberries
Method :
- Preheat oven to 200℃. Line a muffin tin with paper liners.
- Whisk together flour, sugar, baking powder, and salt in a large bowl.
- Add oil to a measuring jug, add egg then ½ cup milk. Add vanilla and whisk to combine.
- Add the milk mixture to the bowl with dry ingredients then use a fork to combine.
- Fold in the blueberries.
- Divide the batter between muffin cups.
- Bake muffins for 15 to 20 minutes, or until the tops are golden brown. Transfer to a cooling rack and enjoy!
