Ingredients :
For the salad:
- 3 cups cooked brown rice
- 4 slices of fresh halloumi
- 2 tomatoes, diced
- 1 Lebanese cucumber, diced
- ½ red onion, sliced
- ¼ cup black olives, sliced
- A generous handful of rocket
- ¼ cup fresh dill
- ¼ cup coriander
For the dressing:
- 1 lemon, juiced
- 3 tbs olive oil
- 1 garlic clove, minced
- ½ tsp Dijon mustard
- Salt and pepper, to taste
Method :
- In a lightly oiled pan, sear off your halloumi so it browns on both sides.
- While the halloumi is cooking, combine dressing ingredients in a jar.
- Place your sliced and diced veggie ingredients in a bowl on top of your cooked brown rice.
- Top with halloumi and herbs, then drizzle over the dressing.
