Ingredients :
- 450g coconut yoghurt
- 5 kiwis, peeled and diced
- Juice and zest of half a lime
- 3 mint leaves, chopped
- 30g pomegranate arils
- 1 tbsp honey
Method :
- Mix together your yoghurt, lime juice, zest and honey.
- To serve, layer as follows: yoghurt, kiwi fruit, yoghurt, kiwi fruit, yoghurt, kiwi fruit, then top with fresh pomegranate arils and mint.
