Ingredients :
- 500g cherry tomatoes
- 3 cloves garlic
- ¼ cup extra virgin olive
- 1 tsp mixed herbs
- ¼ tsp flaky sea salt
- 150g mozzarella, torn into pieces
- Basil leaves, to garnish
Method :
- Preheat your oven to 180°C. Halve the cherry tomatoes and add to a baking tray. Add the crushed garlic, olive oil, mixed herbs and toss together. Place in the oven and bake for 30 minutes or until they are a Jammy consistency.
- Remove the tray from the oven and arrange the cooked tomatoes on a platter with freshly torn mozzarella, basil leaves and flaky salt.
- Serve with crusty bread
