This Sweet Potato, Spring Onion & Feta Salad swaps out the mayonnaise for crumbly cheese and pine nuts, creating mouthwatering flavours that will have you reaching for more!

Ingredients :
- 1kg Sweet Potato, peeled and cut into large chunks
- 1 tbsp Olive Oil
- 140g Feta, roughly crumbled
- 50g Pine Nuts, toasted
- Salt and Pepper to taste
DRESSING:
- 4 Spring Onions, finely chipped
- ½ Bunch of Parsley, chopped
- 2 tbsp Olive Oil
- 2tbsp Honey
- 5 tbsp White Wine Vinegar
Method :
- Preheat the oven to 200℃. Toss the sweet potato with the oil and salt and pepper. Spread on a lined baking tray and roast for 30-35 minutes or until golden and tender. Cool to room temperature.
- In a medium bowl, whisk the dressing ingredients together. Add potatoes to a serving bowl and drizzle over the dressing. Scatter over the feta and pine nuts, and very gently toss them together.
