Preparation time : 15 minutes
Serves : 4
Ingredients :
- 1 medium granny smith apple, unpeeled and grated
- 1 cup rolled oats
- ½ cup apple juice
- ½ cup dairy-free yoghurt, plus extra to serve
- 1 tsp cinnamon
- ¼ cup almonds or walnuts, chopped
- 2 tbs sunflower or pumpkin seeds
- 2 cups seasonal fruit, chopped
- Maple syrup, to serve (optional)
Method :
- Combine all ingredients in a large bowl.
- Cover and refrigerate overnight.
- To serve, evenly distribute the bircher muesli between four serving bowls. Dollop some dairy-free yoghurt on top (coconut yoghurt is delicious with this recipe), then sprinkle over the nuts and seeds. Top with the chopped seasonal fruit of your choice and drizzle over maple if you desire.
