Ingredients :
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 2 garlic cloves, crushed
- 1 tbsp fresh ginger, finely grated
- 1 long red chilli, finely diced (optional)
- 1 lime, freshly squeezed
- 600g pork fillet, cut into bite-sized pieces
- 32 fresh lychees, skin removed and pitted
- Chopped peanuts and lime wedges to serve (optional)
Method :
- In a large glass bowl mix together soy sauce, sesame oil, garlic, ginger, chilli and lime. Add pork and mix. Cover and refrigerate for at least two hours, or up to 24 hours.
- Soak 8 bamboo skewers in water. Thread pork and lychees alternating 3-4 pieces of pork and lychees per skewer.
- Brush with olive oil and cook on a hot barbecue or grill on medium to high heat for 2-3 minutes each side.
- Serve with your favourite Asian-style salad and garnish with chopped peanuts and lime wedges.
