Type: Hard Aged: minimum of 2 years Texture: Crystalline, dense and gritty with a natural rind Colour: Straw yellow Flavour: sharp, fruity and nutty with savoury notes Aroma: strong How to use: Ideal for grating, shred or shave it on pasta, salad, or stirred into soups, and sauces to add depth of flavour and as well as eaten in chunks and adding to cheese boards/platters. Pairing: Excellent with cured meats, dehydrated fruit such as apricots, figs, raisins, plums and with nuts like walnuts and hazelnuts and drizzled with Balsamic Vinegar of Modena.
