Ingredients :
- 3 Tbsp fresh orange juice
- 3 Tbsp red wine vinegar
- 1 large garlic clove, finely grated
- 1 tsp Dijon mustard
- 1/4 cup Extra-virgin olive oil, plus more for drizzling
- Salt to taste
- 1 cup mini pepperoni rounds, cut in halves
- 1/2 head of iceberg lettuce, chopped roughly
- 1/2 head of radicchio, chopped roughly
- 4 stalks celery, thinly sliced
- 2 navel oranges, peeled and cut into small pieces
- 1 cup pitted black olives, thinly sliced
Method :
- To make the dressing, whisk orange juice, vinegar, garlic, mustard, 1/4 cup oil, and salt to taste in a bowl.
- Combine all of the chopped ingredients together in a large bowl.
- Coat with the dressing and serve immediately
