Serves : 4-6 jars
Ingredients :
- 2 cups white sugar
- 1 cup white vinegar
- 4-5 mangoes, peeled and cut into 3/4-inch pieces
- 1 medium onion, chopped
- ½ cup sultanas
- ¼ cup crystallized ginger, finely chopped
- 1 garlic clove, minced
- 1 tsp mustard seeds, whole
- ¼ tsp chilli flakes
Method :
- Combine sugar and vinegar in a 5-6L pot. Bring liquid to a boil, stirring, until the sugar has dissolved completely.
- Add in the remaining ingredients and simmer, uncovered, until the mixture has thickened slightly, around 45 mins – 1 hour. Remember to stir occasionally during cooking.
- Once done, pour the chutney into clean, hot jars, leaving 1/2-inch from the top of the jar. Seal the jars with their lids.
